Calling all garlic and cheese lovers! Add a little Italian flare to your plate with this herby, cheesy take on classic sheet pan veggies.

Ingredients

  • 1 sweet potatoes (medium)
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 red onion
  • 1 teaspoon garlic powder
  • 3 tablespoons olive oil
  • 1/3 cup shredded parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon salt

Directions

  1. Preheat the oven to 425F.
  2. Line a large sheet pan with parchment paper.
  3. Slice the peppers and onion into 1/2 inch squares. Separate the onion layers with your fingers for even cooking.
  4. Chop the sweet potato into 1/4 inch discs, and cut each disc into quarters.
  5. Combine the garlic powder, olive oil, parmesan, Italian seasoning and salt in a large mixing bowl. Mixing the seasonings together.
  6. Add the peppers, onions, and sweet potato to the bowl, and toss to coat.
  7. Pour the seasoned veggies on to the lined baking sheet, and spread them out into a single layer. Bake for 25 minutes.
  8. Remove the veggies from the oven. Serve warm.

Delicious. I didn't use a whole red onion. Next time I will cut back on the oil the parmesan cheese has a lot of oil too when it's cooked. We put diced chicken on top. Yum.

This was super easy to make! I’m not a fan of peppers so I doubled the sweet potatoes and it was fantastic. Going to make this again
