These were delicious! I suggest doubling the recipe. We’re a family of four and it barely made 6 small pancakes for us. But they were very tasty and we’ll make again.

Well it was good, I used wheat flour, and was able to make 10 pancakes for our Sunday breakfast, topped with strawberries, plus bacon.

I didn't have any milk (we drink almond) so I subbed it for raspberry and honey keifer. The consistency seemed a little thick so I added half a banana and some apple sauce, It was delicious. The keifer made it a bit tart but still nice and sweet. I used lots of butter in the pan to saturate the pancake and get a crispy edge. We used 3 tablespoons of brown sugar instead of 1 and it balanced the tartness well. We didn't have to use maple syrup or add any butter after coming from the pan +++

So yummy! Modified the recipe with unsweetened almond milk, gluten-free flour a flax egg, coconut sugar, and coconut oil, and still turned out fluffy. My whole family loved these pancakes. Would make again for sure!
