This creamy, flavorful, and filling casserole requires minimal prep time and is an easy way to re-purpose leftover chicken!

- nonstick cooking spray
- 1 1/2 lb. Yukon Gold potatoes
- 2 scallions
- 1 1/2 Tbsp. extra virgin olive oil
- 1 tsp. garlic powder (for potatoes)
- 1/2 tsp. salt (for potatoes)
- 1/4 tsp. black pepper (for potatoes)
- 1 1/2 lb. cooked chicken (3 heaping cups, diced or shredded)
- 1/2 tsp. salt (for chicken)
- black pepper (to taste, for chicken)
- 2 tsp. garlic powder (for chicken)
- 1 tsp. paprika
- 1 cup sour cream
- 1 cup shredded cheddar cheese (1 cup is 4 oz.)

Directions
- Preheat the oven to 400°F.
- Spray a 9x13-inch baking dish with nonstick cooking spray.
- Dice the potatoes into 3/4-inch pieces and place in the baking dish. Finely mince the scallion and set aside.

Added some boiled broccoli and carrots into potatoes ,before adding cheese on top I mixed a little bit into the casserole, turned out perfectly. 😋

Yummmm, super easy kid approved, i didnt cut the potatoes small enough but still good. dont skip the cheese on top!
