Ingredients

  • 56 ounces rotelle (with diced green chilies, original)
  • 2 cans corn (whole, drained)
  • 2 cans black beans (do not drain)
  • 1 can chickpeas (drained)
  • 1 onions (large, chopped)
  • 1 green pepper (chopped)
  • 1/2 jalapeno chilies (with seeds, minced)
  • 2 tablespoons green onions (chopped, optional)
  • 3 garlic cloves (minced, you can use jarred or powder as well)
  • 1/2 cup cilantro
  • 3 tablespoons lime juice
  • 1 tablespoon olive oil
  • 2 teaspoons salt

Directions

  1. In a large bowl combine all the ingredients and mix together. If you do not have garlic cloves on hand you can replace it with 1 teaspoon of garlic powder or 1 tablespoon minced garlic from a jar. You can add more or less salt than listed above, I usually prefer this salsa to be a little bit more salty.
  2. Refrigerate over night and serve with chips.
  3. Great on salads, eggs, chicken, and rice!
