  • 2 cups all purpose flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon cream of tartar
  • 1/4 cup shortening
  • 3/4 cup low fat milk
  • 3 tablespoons sugar
  • 1 tablespoon cinnamon

    Directions

    1. In a large bowl stir together flour, baking powder and cream of tartar.
    2. Cut in the shortening until mixture is course crumbs. Make a well in the center of the flour mixture. Add milk all at once. Using a fork, stir just until mixture is moistened.
    3. Turn dough out onto a lightly floured surface. Knead dough by folding and gently pressing it for 10-12 strokes or until dough is nearly smooth. Divide dough in half. Roll each dough half out into a rectangle. In a small bowl stir together sugar and cinnamon. Sprinkle the sugar mixture over the rectangle, and roll.
    4. Cut into 2 or 3 inch pieces and place in the muffin cups.
    5. Bake for about 12-15 minutes.
