In about 10 minutes prep time you can turn leftover cooked chicken and rice into a deliciously creamy, crowd-pleasing casserole topped with crispy cracker crumbs. - nonstick cooking spray
- 4 cups cooked rice
- 3 cups cooked chicken (diced or shredded)
- 2 scallions (large, minced)
- 1/2 cup grated Parmesan cheese (for casserole)
- 1/2 cup shredded cheddar cheese
- 1 can evaporated milk (12 oz. per can)
- 1 cup sour cream
- 1 tsp. salt (plus more to taste)
- 1/4 tsp. black pepper
- 1 1/2 tsp. garlic powder
- 32 round buttery crackers (like Ritz, crushed into crumbs)
- 1/4 cup grated Parmesan cheese (for topping)
- 3 Tbsp. butter (melted)

Directions
- Preheat the oven to 350°F.
- Spray a 9x13-inch baking dish with nonstick cooking spray. Set aside.
- Place the rice, chicken, scallions, Parmesan cheese, cheddar cheese, evaporated milk, sour cream, salt, black pepper, and garlic powder in a large mixing bowl. Mix until the ingredients are well combined.

Easy to put together, and can substitute liquids for leftover broccoli and cheese soup.

it was a hit! added Ranch seasoning mix to add flavor and Chicken In a Bisket crackers on top.

Really simple and yummy, makes for good left overs. This has become a go-to recipe for me when I don’t feel like cooking much but need to use up the chicken in the fridge

We really don't eat many casaroles, but this one was a hit with almost everyony. It was super easy and tasty.

Very delicious! I did not have all the ingredients on hand, so i substituted alfredo sauce for condensed milk and only used the parmesan cheese on the topping.
