We did a similar recipe with more tortillas, but it was a little dry, so I suggest sticking to the smaller number. @Russ: I imagine you could make it more like a low-carb/keto lasagne: swap tortillas with thinly sliced zucchine or shredded/forked baked spaghetti squash.

I'll give it two stars. This came under healthy meals, and I'm sorry, 3 cups of a high fat cheese is anything but healthy in my opinion. Also, 560 calories per serving is a lot.

I think the best enchilada sauce you’ll find is in your international isle in your grocery store. The one thing to look for is the sodium level...try and get one on the low sodium side then you can adjust the salt level to your taste without worry. Old El Paso brand is pretty good, I’m sure there’s better but I like that one a lot and use it often. Just for further information...check the spices in the ingredients on the label, you can always add more if you think it’s too bland.

This is a good, quick and easy recipe. Tonight was my second time making it. I typically always have these ingredients on hand so it’s easy to throw together. I can see adding additional ingredients if you want to but we keep it simple like the recipe and it tastes great.

I added green chili’s to the dish to enhance the flavor. Kinda blah, otherwise.
