OMG! New recipe never had this before, it was quick and very simple to make. The store didn’t have that cheese so I used Mexican and shredded mozzarella and it was still AMAZING! I also added cooked corn on top. & I don’t usually like the red enchiladas! So glad I gave this a try! Thank you!

So good and so easy! I used a $5 rotisserie chicken and, instead of regular corn tortillas, I used street taco size corn tortillas for more of a delicate flavor.

It tasted delicious and it was very simple to make. If the most laborious part of the cooking process is shredding the chicken, then you’ve got yourself an easy recipe! Would highly recommend!
