I make this recipe often! My kids and hubby devour this. The layering makes it dummy proof, prevents tortillas from being ripped etc. I also add in diced green chillies.

Easy and yummy! I added more sauce and a bit of chopped pickled jalapeños for some kick.
This was amazing! I actually ended up using three cans of hot enchilada sauce because I found that two 10 oz. cans were not enough. I used an entire package of Monterey cheese for the first two layers and used an entire package of Kraft Perfectly Paired Fine Cut Cheddar & Asadero cheese for the top layer. I topped individual servings with a dollop of sour cream to tame the heat. Next time I make this, I will use three large chicken breasts instead of two. Note: I used Toufayan gluten free wraps/tortillas.

I was worried it might be too spicy was it was delicious! Everyone loved it and had seconds. Served with salsa & tortilla chips. Will probably have sour cream with it next time. I used corn tortillas and my husband commented that it made them kind of tamale like, which he likes.

Delicious! I added beans and spinach. Super quick and easy
The chicken took a little longer to cook than the recipe stated. I will cut it into smaller pieces next time. It was really good otherwise and my husband even went back for seconds. I served it with a little salsa and sour cream and it was delicious.

Loved it! Next time I think I'd like to add green chilies or something to add just a little something. But I love this recipe, it turned out delicious!
So good!!! Perfect balance I did a little more cheese and in a 9x13 pan instead of a casserole dish I cooked at 360 for 25 and it was perfect
