  • 1 pound lean ground beef (we use grass fed beef)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 tablespoon onion powder
  • 4 cups shredded cabbage (I used an entire bag of Trader Joe’s shredded cabbage)
  • 1 1/2 cups rice (uncooked regular, NOT MINUTE RICE)
  • 3 cups water (to cook the rice in)
  • 10 ounces cream of chicken soup
  • 1 can rotel (undrained)
  • 3/4 cup water (seperatly to mix with the soup)
  • 2 tablespoons butter
  • 1 cup shredded cheddar cheese
  • salt
  • pepper

I really like this casserole. When I first found it I was looking for a recipe that contained cabbage.as I had a half of a head I wanted to use up. I happened to have all the ingredients in my cupboard so it was a no- brainer. Didn't even have to make a run to the store. I added the sour cream and still, I think It was very light. With only my husband and I here to eat it, I cut the leftovers up into serving size squares, wrapped them up individually and froze them. What a yummy quick dinner. It was just as good warmed up.
