Turned out great. Added extra jalapeños and used a spicy enchilada sauce to make it better for me

My family loved this! I made a double-batch, and only a couple remain. “Jalapeño” is a dividing issue in our house, so I took the advice of a previous commenter and used green chilies. The enchiladas were a hit!

This recipe is super easy and quick. Both my kids, my husband and I really enjoyed it...which is not always the case! I’ll definitely put this dinner in the rotation.
