Ingredients

  • 1 pound salmon (slice into cubes)
  • 1 piece carrots (medium sized, cut into bite size pieces)
  • 2 stems celery (cut into bite size pieces)
  • 1 handful spinach
  • 1 can coconut milk (or lesser)
  • 1 onions (medium size, chopped)
  • 1 tablespoon canola oil
  • 1 teaspoon curry powder (yellow, or more, according to your preference)
  • salt (to taste)

    Directions

    1. Heat cooking oil then add in the onion and cook until transparent.
    2. Add in carrots and celery.
    3. Pour the 1 can coconut milk and let it simmer. If you do not like a lot of soup on this salmon curry, slowly add coconut milk and adjust accordingly.
    4. Then , Add in the salmon simmer until salmon is cook through. Add in salt and curry powder. Add the spinach and turn off heat. Serve while hot.
