Dukan-Style Milassou


A beautiful and elegant dish, perfect for transitioning from Summer to Fall with its combination of warm and zesty flavors and gorgeous colors. Oat and wheat brans gives it a heartiness and loads of fibrous nutrition. The deep flavors of the pumpkin contrast the bright lightness of the orange blossom water (or vanilla extract). Rum aroma not only gives this meal its amazing smell, but a hint of spice to balance it all out.


  • 4 tablespoons oat bran
  • 2 tablespoons wheat bran
  • 5 eggs
  • liquid sweetener (artificial)
  • milk (40 cl.)
  • 2 teaspoons yeast
  • 300 grams pumpkin
  • rum extract (or similar)
  • vanilla extract
  • vanilla extract
  • orange blossom water


  1. Preheat the oven to 350F.
  2. In a bowl, combine the oat bran and wheat bran.
  3. In another bowl, whisk the eggs and add the liquid sweetener and milk.
  4. Add the yeast, rum extract, vanilla extract, and brans.
  5. Mix well.
  6. Mash the pumpkin into pieces and add to the batter.
  7. Mix everything well and pour into a round baking dish.
  8. Bake for 40 minutes.
