Dukan-Style Coleslaw

Sweet, tangy, and light summer coleslaw is the perfect side dish to take on a picnic. This beautiful display of vegetables incorporates bright orange, yellow, and white hues that scream Summer. Stunning julienned carrots, white cabbage, and onion are tossed in an acidic and tangy cider vinegar, small swiss, with just a touch of salt and pepper for seasoning. Keep the vinegar dressing in a separate container if this is being prepared in advance; the coleslaw should be served immediately so the dressing doesn't ruin the texture of the crisp vegetables.

  • 2 carrots
  • 1 white cabbage
  • 2 onions
  • 1 yogurt (Petit Suisse)
  • cider vinegar
  • garlic powder
  • salt (to taste)
  • ground black pepper (to taste)

  1. Grate the carrots.
  2. Cut the white cabbage and onions in julienne.
  3. Combine the yogurt, vinegar, garlic, salt, and pepper.
  4. Pour dressing onto the vegetables and mix well.
  5. Serve chilled.
