Dukan-Style Brioche


Soft French style muffins that are packed with protein! These flakey, buttery muffins are a great morning on-the-go breakfast item or after school snack. Yogurt keeps the dough from drying out and gives a slight sour flavor that counters the sweetness of the milk and sugar. Any yogurt can be used; however, plain low-fat yogurt will give the highest nutrition and intensify the taste. Mix together the dough and bake in a matter of minutes. No effort, no time, and no guilt!


  • 40 grams protein powder
  • 3 tablespoons powdered skimmed milk
  • 1 tablespoon yogurt
  • liquid sweetener (to taste)
  • 2 teaspoons yeast
  • 2 eggs
  • 2 drops vanilla extract


  1. Preheat oven to 400F.
  2. In a bowl, mix all the ingredients to a smooth dough.
  3. Pour the batter in muffin molds and bake for 10 to 15 minutes.
