Dukan-Style Brioche


Soft French style muffins that are packed with protein! These flakey, buttery muffins are a great morning on-the-go breakfast item or after school snack. Yogurt keeps the dough from drying out and gives a slight sour flavor that counters the sweetness of the milk and sugar. Any yogurt can be used; however, plain low-fat yogurt will give the highest nutrition and intensify the taste. Mix together the dough and bake in a matter of minutes. No effort, no time, and no guilt!


40 grams protein powder
3 tablespoons skim milk powder
1 tablespoon yogurt
liquid sweetener (to taste)
2 teaspoons yeast
2 eggs
2 drops vanilla extract


1Preheat oven to 400F.
2In a bowl, mix all the ingredients to a smooth dough.
3Pour the batter in muffin molds and bake for 10 to 15 minutes.
