Description

Dutchess potatoes are simply mashed potatoes that are piped into mounds, then broiled until nicely browned, for a prettier presentation. If you don't have a pastry bag, you can use a plastic bag with the corner snipped off to pipe the potatoes--here enriched with a little butter and seasoned with salt and pepper--onto the baking sheet (line with parchment paper for easier cleanup). Brushing the mounds with beaten egg encourages browning.

Ingredients

  • 2 potatoes
  • 1 tablespoon butter
  • salt
  • ground black pepper
  • cheese (choice, grated)
  • 1 eggs (beaten)

Directions

  1. 1Put the oven on broil.
  2. 2Boil the potatoes in plenty of boiling water.
  3. 3Once cooked, mash them with the butter, salt, pepper, and cheese. If it still looks too thick, you can add milk little by little until reaching your desired consistency.
  4. 4Place the mashed potatoes in a pastry bag or a sealed plastic bag with the corner cut off. Squeeze out cone-shaped sections onto a baking tray.
  5. 5Paint beaten egg on the top of each cone and broil until golden.
