If you want a stronger flavor, you can add diced onion and freshly chopped coriander to the sauce. Experiment with different lagers to find your favorite version of this Drunken Sauce. Ingredients

  • 2 Ancho chilies (seeded and deveined)
  • 5 tomatillos
  • 1 clove garlic
  • salt
  • 250 milliliters lager beer
  • 1 tablespoon coriander (chopped)
  • 2 tablespoons onion (chopped)

Directions

  1. In a saucepan, add the chilies and tomatoes. Cook until the chilies have softened.
  2. In a blender, add the chilies, tomatoes, garlic, and salt. Puree until smooth.
  3. Pour the sauce into a glass jar.
  4. Add beer and stir.
  5. Add coriander and onion for a richer taste.

I used tequila instead of beer in the sauce. I also added in a small handful of chopped cilantro. This sauce tastes amazing with sauteed shrimp.
