Description

Cocoa and chunks of dark chocolate make for extra-rich muffins in this easy recipe. The hardest part, really, is prepping the dry and wet ingredients separately. Be careful not to fill the muffin tins too high — 3/4 of the way will do. Otherwise, they'll overflow while baking. You can store these at room temperature in an airtight container for up to three days or freeze them for a month. Simply thaw before serving and warm them up, if you'd like.

Ingredients

210 grams flour
210 grams sugar
10 grams baking powder
50 grams dark chocolate (cut into pieces)
70 grams cocoa (powdered)
2 teaspoons baking powder
salt
150 milliliters milk
3 eggs
130 grams butter (melted)
1 teaspoon vanilla extract

Directions

1Preheat the oven to 190C.
2Grease the muffin pan.
3Sift the flour, the baking powder, the sugar, the cocoa, and a pinch of salt in a bowl.
4In another bowl, beat the eggs with the butter, the milk, and the vanilla extract.
5Add the liquid ingredients to the bowl with the wet ingredients and stir just enough to combine.
6Add the dark chocolate pieces.
7Fill the muffin pan to 3/4 and bake the muffins for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean.
