These ultra-rich muffins are spiced with cinnamon and made with two kinds of chocolate (cocoa powder and whatever baking chocolate you prefer). Meanwhile, cake flour keeps them crumby and tender. Upping the ante further, they're dusted with more cocoa powder once they're removed from the oven and cooled. So go on and skip the trip to your local bakery without a second thought — you won't regret the decision, especially when these are eaten the same day they're prepared.

Ingredients

  • 230 grams cake flour
  • 30 grams cocoa powder
  • 1 teaspoon baking powder
  • 150 grams sugar
  • 1 teaspoon ground cinnamon
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 100 milliliters sunflower oil
  • 225 milliliters milk
  • 185 grams baking chocolate (chopped)

Directions

  1. Preheat the oven to 190 degrees Celsius.
  2. Sieve the flour, cocoa powder, baking powder, sugar, and cinnamon into a large bowl.
  3. In a separate bowl, beat the egg, oil and milk.
  4. Mix the flour mixture with the egg mixture. Add the chocolate and stir well.
  5. Fill each muffin mold 3/4 full.
  6. Bake for 20 minutes.
  7. Remove from oven and leave to cool on a cooling rack.
  8. Sprinkle with additional cocoa powder when cool.

We like to experiment with these muffins! We dusted with additional cocoa powder, as suggested, the first time we made them then drizzled with a melted chocolate bar the next time! Then my husband suggested skipping the cinnamon and adding crumbled bacon to the batter! It worked! Thanks for a fun new recipe!
