Description

These ultra-rich muffins are spiced with cinnamon and made with two kinds of chocolate (cocoa powder and whatever baking chocolate you prefer). Meanwhile, cake flour keeps them crumby and tender. Upping the ante further, they're dusted with more cocoa powder once they're removed from the oven and cooled. So go on and skip the trip to your local bakery without a second thought — you won't regret the decision, especially when these are eaten the same day they're prepared.

Ingredients

  • 230 grams cake flour
  • 30 grams cocoa powder
  • 1 teaspoon baking powder
  • 150 grams sugar
  • 1 teaspoon ground cinnamon
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 100 milliliters sunflower oil
  • 225 milliliters milk
  • 185 grams baking chocolate (chopped)

Directions

  1. 1Preheat the oven to 190 degrees Celsius.
  2. 2Sieve the flour, cocoa powder, baking powder, sugar, and cinnamon into a large bowl.
  3. 3In a separate bowl, beat the egg, oil and milk.
  4. 4Mix the flour mixture with the egg mixture. Add the chocolate and stir well.
  5. 5Fill each muffin mold 3/4 full.
  6. 6Bake for 20 minutes.
  7. 7Remove from oven and leave to cool on a cooling rack.
  8. 8Sprinkle with additional cocoa powder when cool.
