Description

Layering two fish fillets with an aromatic "stuffing" (this one also includes shrimp) is an easy way to impart more flavor to the fish as it bakes. You can use most any firm, white-fleshed fish, such as sea bream or sea bass, in this recipe. Leaving the skin on the fillets will ensure that they stay moist and juicy in the oven, and you can remove them before eating if desired.

  • 100 grams garlic
  • 1 leek (large)
  • 2 fillets (of ration filleted)
  • 6 prawns
  • salt
  • pepper

    Directions

    1. We start by making the filling of the bream. We poach the garlic and leek finely chopped for 10 minutes over medium heat.
    2. Once poached, put a fillet of sea bream in the bottom of a baking dish, season with salt and pepper, place the vegetables and prawns on top and add a splash of olive oil.
    3. Cover with the second seasoned dorara fillet, put a little olive oil on top and put it in the oven preheated to 190º for 20-22 minutes.
