  • dogfish (sliced)
  • salt (to taste)
  • ground black pepper
  • garlic
  • lemon
  • 20 milliliters extra-virgin olive oil
  • 1 onion (chopped)
  • 5 garlic cloves (minced)
  • 2 tomatoes (chopped)
  • 5 tablespoons tomato paste
  • basil (chopped)
  • 1 can coconut milk

Directions

  1. Season the fish with salt, pepper, garlic, and lemon. Marinate.
  2. Heat a little olive in a frying pan with high sides, and saute the onion and garlic until soft and golden.
  3. Add tomatoes, and saute well until they begin to dissolve, add the tomato paste, pepper, and half the basil.
  4. Stir well until a slightly thick sauce forms.
  5. Add the coconut milk, season with salt, and add the sliced dogfish.
  6. Cook half uncovered over medium heat for 20 minutes, or until the fish is cooked.
  7. Turn fish over, sprinkle with a little more basil and some chives.
  8. Serve with white rice.

I had great success with this recipe. Cooking the fish in the coconut milk keeps it nice and moist and it really takes on a lot of the flavors from all of the aromatics in the cooking pan. I served this family style with a large mound of rice on a platter and the fish steaks surrounding it. The rice soaked up some of the sauce and it was a very nice meal.
