  • 3 1/2 pounds yukon gold potatoes (peeled and cut into 1-inch pieces)
  • kosher salt
  • ground black pepper (Freshly)
  • 1 cup mayonnaise
  • 3 tablespoons yellow mustard
  • 6 large eggs (hard-boiled, peeled and chopped)
  • 1/4 cup celery leaves
  • 6 scallions (thinly sliced)
  • 1/3 cup fresh flat leaf parsley (chopped)
  • 4 ounces diced pimentos (drained)
  • sweet paprika (for garnish, optional)

    Directions

    1. Place potatoes in a medium saucepan; cover with cold salted water. Simmer until tender, 4 to 5 minutes. Drain.
    2. Combine mayonnaise and mustard in a bowl. Add potatoes, eggs, celery and leaves, scallions, parsley, and pimentos, and toss to combine. Season with salt and pepper. Garnish with paprika.
