Description

Everyone needs a basic cake recipe to call their own. This standard recipe showcases the flavors of lemon and vanilla. Before it's transferred to the oven, the batter is sprinkled with chocolate chips and slivered almonds, which bake into the cake and add textural interest. Once cooled, the cake is sprinkled with powdered sugar, and it's ready to slice and serve. Drizzle it with chocolate sauce or plate it with a bit of fruit coulis.

Ingredients

  • 230 grams flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • salt
  • 150 grams sugar
  • 1/2 lemon
  • 2 eggs (medium, at room temperature)
  • 120 grams butter (softened)
  • milk (at room temperature)
  • chocolate chips
  • slivered almonds
  • powdered sugar

Directions

  1. 1Preheat the oven to 170C.
  2. 2Butter and flour a round 24 centimeter springform pan.
  3. 3Cream the butter with the sugar, then add the eggs, one at a time, and the vanilla extract.
  4. 4Sift the flour with the baking powder and a pinch of salt.
  5. 5Add the flour to the butter mixture alternating with a few tablespoons of milk. Add the lemon juice.
  6. 6Pour the batter into the cake pan and sprinkle the surface with chocolate chips and slivered almonds.
  7. 7Bake for approximately 40 minutes or until a toothpick inserted in the center comes out clean.
  8. 8Remove the cake from the oven, let it cool and sprinkle with powdered sugar.
