Ingredients

  • 1 pound deer (ground, no suet)
  • 1 pound ground pork
  • 2 teaspoons ground sage
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper

Directions

  1. Put ground deer and pork together in large bowl.
  2. Mix spices together and sprinkle over meat.
  3. Using hands work meat and spices together until thoroughly combined.
  4. Shape into a roll, wrap in plastic or foil and chill overnight in refrigerator.
  5. Slice and fry as regular sausage.
