This date and walnut cake is packed with warm flavors that are perfect for the wintertime. Featuring chopped walnuts and dates, this cake is then covered in powdered sugar for a light and sweet finish.

Ingredients

  • 200 grams walnuts (broken into small pieces)
  • 1 cup dates (cut into small pieces)
  • 120 grams margarine
  • 1 cup sugar
  • 1 tablespoon warm water
  • 2 large eggs
  • 1 cup flour
  • 1/2 teaspoon baking powder
  • powdered sugar (to taste)

Directions

  1. Preheat oven to 150 degrees Celsius.
  2. Prepare the nuts and dates.
  3. Set aside.
  4. In a bowl, beat the margarine, softened in the microwave, with sugar.
  5. Add water and eggs, and beat until creamy.
  6. Add the flour and the baking powder, and beat some more.
  7. Mix in the walnuts and dates, distribute evenly in the dough, which will be heavy.
  8. It is a heavy dough.
  9. Grease a baking tray with margarine, and sprinkle with flour.
  10. Pour dough in the baking tray.
  11. Bake for about 30 minutes.
  12. Check the cooking with a toothpick, taking care not to let it get too dry.
  13. Remove from oven, and cut into small squares or rectangles.
  14. While the cake still warm, coat each piece with powdered sugar.

A really good recipe for a date and walnut cake. I really like the taste of these together. It is much sweeter than I thought it would be, but in a good way. Make sure to coat with powdered sugar as soon as you cut it (warm.) It really enhances the taste. I did find it to be a little heavy overall though.
