Ingredients

  • 1/4 cup pitted dates (chopped)
  • 1 teaspoon baking soda
  • 6 1/2 tablespoons low fat spread
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup self-rising flour (sifted)
  • custard (or heavy cream, to serve)

Directions

  1. Preheat oven to 350°F. Lightly coat an 8 inch square cake pan with oil. Line base and sides with parchment paper.
  2. Combine dates, baking soda and 1/2 cup boiling water. Bring back to a boil then remove from heat. Let cool for 10 mins.
  3. Meanwhile, cream spread and brown sugar until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. Fold in 1/4 cup flour along with 1/2 of the date mixture. Fold in remaining flour and date mixture. Transfer to prepared pan, smooth top and bake for 40-45 mins, until a skewer inserted in the center comes out clean.
  4. Cut into squares. Serve warm with custard.
