My first-ever taste of lentil soup was this recipe, and it just made my heart sing, it tasted so good!

Ingredients

  • 2 cups red lentils
  • 8 cups fat-free chicken broth
  • 2 onions (large)
  • 1 pound carrots
  • 2 yellow summer squash (medium)
  • 2 teaspoons sea salt
  • 2 tablespoons ground cumin
  • 1/4 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 1 clove garlic (minced)

    Directions

    1. Rinse lentils thoroughly and remove any debris. Discard rinse-water. In large Dutch oven, cover lentils with 4 cups broth, and bring to a boil. Reduce to medium heat and simmer till lentils are tender. (Approximately 20 minutes)
    2. Dice onions and garlic, chop carrots and squash coarsely. In a large skillet, heat olive oil to medium heat. Add chopped vegetables, salt, pepper and cumin. Saute until onions are translucent. Add vegetable mixture to lentils in Dutch oven. Simmer on low to medium heat until vegetables are tender. (Approximately 20 minutes)
    3. Remove lentil/broth/vegetable mixture from heat and puree in food processor or blender. Replace pureed mixture into Dutch oven and adjust seasonings to taste. Reheat for 10 minutes. Add lemon juice immediately before serving.
