Description

These Danish Cookies have a very sweet, buttery taste. They have a light, fluffy texture, perfect for dipping in unsweetened drinks, such as tea or coffee. There are only six ingredients, which whip together in a straight-forward fashion, without any complicated steps. The total prep time, after subtracting resting and refrigeration time, is about 15 minutes. These cookies are perfect for entertaining and will delight even your most demanding guests (even if those ‘guests’ are your own family).

Ingredients

  • 130 grams butter (softened)
  • 135 grams powdered sugar
  • 1 eggs
  • 1 tablespoon vanilla extract
  • 230 grams flour
  • 7 grams baking powder

Directions

  1. 1Preheat the oven to 200 degrees Celsius.
  2. 2Cream together the butter and sugar.
  3. 3Add the egg and vanilla and mix well.
  4. 4Sift the flour and baking powder together and add to the wet mixture. Combine well and make a ball with the dough.
  5. 5Allow the dough to rest 30 minutes.
  6. 6Pinch pieces of dough off and roll them into balls. Place the balls on a flat surface and flatten with your hand. Repeat until all the dough is used.
  7. 7Place the dough balls in the refrigerator 1 hour to firm up.
  8. 8Bake for 10 minutes.
