Danish Cinnamon buns or "Kanelsnurrer"

Description

Cinnamon buns with the flair of Denmark. Featuring both cardamom and cinnamon, this sweet bread makes an excellent breakfast when served with coffee or hot chocolate.

Ingredients

50 grams bakers yeast (fresh)
5 deciliters cold milk
1 eggs
1 kilogram flour
12 grams cardamom
150 grams sugar
15 grams salt
150 grams butter (soft)
125 grams softened butter
125 grams sugar
2 teaspoons ground cinnamon
1 eggs

Directions

1In the bowl of an electric mixer, combine yeast and cold milk.
2Add the egg, flour, cardamom, sugar and salt.
3Knead with the hook attachment until smooth.
4Let it rise for about 20 minutes in a warm place.
5Add the butter cut into small pieces and knead for about 15 minutes. The dough will become shiny.
6Let it rise for about 1.5 hours in a warm place.
7On a slightly floured surface, place the dough, punch it gently with your fist to deflate it.
8Roll out the dough into a rectangle about 40 cm wide and 50 cm long.
9In a medium bowl, whisk the softened butter, sugar and cinnamon to make a thick paste.
10Spread the dough with the cinnamon- butter filling.
11Fold 1/3 of the dough from the left towards the center, then fold over the other third.
12Roll the dough to make it 30 cm wide and 50 cm long.
13Cut this dough into 16 portions.
14Twist each strip of dough holding both ends.
15Twist the ends in opposite directions, 4 to 5 turns.
16Take the dough and turn it 2 times between the index and middle finger.
17Arrange the buns on a baking sheet lined with parchment paper.
18Let rise for about 1.5 hours.
19Preheat oven to 200 degrees Celsius.
20Glaze the "kanelsnurrer" with the egg slightly beaten.
21Bake for 12 to 14 minutes.
