Description

The soup that looks like dessert. The natural yogurt supplies a slight sour taste, while the sugar and the strawberries offer a good counterbalance. Speculoos biscuits give this soup a bit of bulk and are an excellent touch.

Ingredients

  • 3 eggs
  • 1 egg yolks
  • 100 grams sugar (fine)
  • 1 vanilla pods
  • 2 lemon
  • 1 liter buttermilk (or fermented milk)
  • 2 natural yogurts
  • 250 grams strawberries
  • 10 biscuits (speculoos)

Directions

  1. 1In a bowl beat the eggs, egg yolk, sugar and, vanilla seeds (cut the vanilla beans in half, and scrape the inside with the tip of a knife) until the mixture whitens.
  2. 2Grate the zest of one lemon, and then press the 2 lemons.
  3. 3Add zest and juice to the mixture. Gradually add the milk and yogurt, while stirring.
  4. 4Refrigerate.
  5. 5Cut the strawberries into 4 pieces, and crack the Speculoos biscuits into pieces.
