Ingredients

  • 25 grams fresh yeast
  • 2 grams milk
  • 1 eggs
  • 50 grams sugar
  • 400 grams wheat flour
  • 75 grams softened butter
  • salt

  • 75 grams sugar

  • 2 teaspoons cinnamon
  • 1 eggs
  • sliced almonds

Directions

  1. 1Bun Preparation:
  2. 2Dissolve the yeast in the milk and let it stand for 5 minutes. Add the egg, sugar, flour, butter, and a pinch of salt. Knead in the food processor
  3. 3Knead with the food processor until the dough no longer sticks to the sides of the bowl. Remove from the food processor bowl, form a ball of dough and place it in a bowl. Cover the bowl with a cloth, and let rise for 45 minutes in a warm place.
  4. 4Place the dough on a floured surface, divide the dough in 2 pieces.
  5. 5Flatten each piece of dough and fold in half widthwise, then roll it into a long strip about 20 centimeters long.
  6. 6Place on a baking tray covered with parchment paper.
  7. 7Topping Preparation:
  8. 8In a bowl, mix the almond paste, sugar, butter, and cinnamon. You should get a thick paste.
  9. 9Gently spread this mixture on each long dough strand using a knife.
  10. 10This is a bit tricky because the dough is very soft and the mixture is a little thick. Then braid the two strands of dough.
  11. 11Let rise for 30 minutes.
