  • 1/4 cup mayonnaise
  • 1 teaspoon curry powder
  • 4 whole wheat tortillas
  • 2 tablespoons mango chutney
  • 11 tablespoons lime juice
  • avocado (medium ripe, sliced)
  • 19 ounces black beans (rinsed and drained)
  • 1 cup red cabbage (finely shredded)
  • 1/3 cup celery (thinly sliced)
  • 1/4 cup sliced green onions (thinly)
  • 1/4 cup sliced almonds (toasted)
  • 2 tablespoons chopped fresh cilantro
  • salt
  • freshly ground black pepper

Directions

  1. Combine mayonnaise and curry powder in a small bowl. Spread over one half of tortillas. Spread the other halves with chutney.
  2. Drizzle lime juice over avocado and lay down centre of each tortilla.
