Ingredients

  • 3/4 cup heavy cream
  • 3/4 cup sour cream
  • 1/2 cup mayonnaise
  • 2 teaspoons curry powder (to taste + extra for sprinkling)
  • 1 1/3 cups peanuts (unsalted, roughly chopped and toasted, 2 tbsp reserved for garnish)
  • 2 sprigs fresh flat leaf parsley (1 leaf reserved for garnish, remainder finely chopped)

Directions

  1. Mix cream, sour cream and mayonnaise. Add curry powder, season and add a pinch of sugar. Add peanuts then transfer to a serving bowl. Sprinkle with parsley, curry powder and reserved peanuts. Garnish with parsley leaf.
