Curried Pasta Salad with Feta Cheese

Ingredients

  • 2 ounces macaroni
  • 1 tablespoon orange juice
  • 3 tablespoons low-fat yogurt
  • 1 teaspoon mild curry paste
  • 1 teaspoon olive oil
  • 1 beefsteak tomato (large, halved and sliced)
  • 1/4 pound cucumber (diced)
  • 1 1/2 ounces feta cheese (cubed)
  • 1 tablespoon pitted black olives (sliced)
  • 3 sprigs fresh thyme leaves (removed from 1/2)

Directions

  1. Cook pasta in salted boiling water according to package instructions. Meanwhile, mix orange juice, yogurt, curry paste and olive oil and season. Drain pasta, toss with sauce then set aside to cool.
  2. Toss cooled pasta with tomato, cucumber, cheese, olives and thyme leaves. Adjust seasoning and garnish with remaining thyme sprigs.
