Ingredients

  • 1 onion (sliced)
  • 1 tablespoon butter
  • 1 tablespoon vegetable oil
  • 4 leeks (large, white parts, sliced)
  • 1 potato (sliced)
  • water
  • salt
  • 1 tablespoon curry powder
  • 2 tablespoons heavy cream

Directions

  1. Saute the onion in a mixture of butter and oil.
  2. Once softened, add the leeks and potatoes. Saute for 5 minutes.
  3. Cover everything with water, salt to taste, and simmer on low heat for 40 minutes.
  4. Blend together with the curry and cream. Add the curry little by little until reaching the flavor you like.

This is basically potato soup with curry added. If you like traditional potato soup, you will love this one. The curry adds a unique flavor that is not quite like anything I have had before. I found it interesting yet palatable all at the same time. Curry is an acquired taste, but I loved it.
