Curried Chickpeas with Spinach

  • 2 tablespoons olive oil
  • 1 onion (Small)
  • 2 cloves garlic
  • 1 tablespoon ginger
  • 1 1/2 tablespoons curry powder
  • 8 ounces fresh spinach
  • 15 ounces tomato sauce
  • 29 ounces chickpeas
  • white rice (Brown/)

    Directions

    1. Combine the diced onion, garlic, and ginger. Saute in a large skillet with the olive oil over medium heat until the onions have softened (3-5min.)
    2. Add the curry powder and continue to saute with the onion mixture for one minute more. Add about 1/4 cup of water & the spinach.
    3. Drain & rinse the chickpeas & add them to the skillet along with the tomato sauce.
    4. Serve over brown or white rice.
