Ingredients

  • 125 milliliters vinegar (chardonnay)
  • 50 grams caster sugar
  • 2 lemon (Amalfi if possible)
  • 125 milliliters extra-virgin olive oil
  • 25 grams sugar
  • 75 grams salt
  • 20 grams lemon zest
  • 10 grams lime zest
  • 10 grams coriander seeds (gently toasted in a dry pan and lightly crushed)
  • 2 grams black peppercorns (gently toasted in a dry pan and lightly crushed)
  • 2 mackerel (fresh)
  • 1 cucumber
  • olive oil (for drizzling and frying)
  • 3 tablespoons shallots (finely chopped)
  • 1 garlic cloves (very finely chopped)
  • 2 1/2 tablespoons vinegar (Chardonnay)
  • 150 grams broad beans (podded, blanched, peeled)
  • 150 grams fresh peas (podded, blanched)
