- 1 cucumber
- 1 orange
- feta cheese
- 1 sprig mint
- pumpkin seeds
- walnut oil
- 1 lemon juice (and zest)
- ground black pepper
- Cut the cucumber vertically using a mandolin slicer.
- Roll the slices and arrange them on a plate.
- Peel and cut the orange in slices. Place the orange slices, feta, and mint on the plate with the cucumber.
- Season with walnut oil, lemon juice, lemon zest, salt and pepper.
