The cool flavors of cucumber and mint of this cucumber and orange salad will refresh you on a warm day. Sprinkled with feta cheese, pumpkin seeds, and walnut oil, make this vegetarian and gluten free salad for a sunny springtime picnic or summer patio lunch.

Ingredients

  • 1 cucumber
  • 1 orange
  • feta cheese
  • 1 sprig mint
  • pumpkin seeds
  • walnut oil
  • 1 lemon juice (and zest)
  • salt
  • ground black pepper

Directions

  1. Cut the cucumber vertically using a mandolin slicer.
  2. Roll the slices and arrange them on a plate.
  3. Peel and cut the orange in slices. Place the orange slices, feta, and mint on the plate with the cucumber.
  4. Season with walnut oil, lemon juice, lemon zest, salt and pepper.

I liked this salad except for the whole mint leaves. I chopped and sprinkled them over the top and was pleased with the hint of mint with the cool citrus and cucumber. I also used raw pumpkin seeds.
