Think of this recipe as the essence of ease -- and of the classic gazpacho, with only cucumbers, lime juice, fresh mint, and salt and pepper as the ingredients. Be sure to peel the cucumber before blending (you can also remove the seeds if your prefer, though that's not essential). Add more lime juice to suit your taste, and garnish with more lime for squeezing into each serving, for added brightness.


  • 2 cucumbers
  • 2 limes
  • salt
  • pepper
  • 15 mint leaves


  1. Place the peeled and diced cucumber in the blender with the lime juice, the mint leaves and blend until you get a smooth mixture, seasoning it with salt, pepper and olive oil to taste.
  2. Blend for another 10 seconds and serve with a slice of lime and a pinch of olive oil.
