Ingredients

  • 1/4 inch fresh ginger (piece, peeled and finely grated)
  • 3/4 cup plain yogurt
  • 1 tablespoon honey
  • 2 tablespoons white wine vinegar
  • 1 ounce dill (finely chopped)
  • 1 honeydew melon (deseeded, flesh cubed)
  • 2 cucumbers (diced)

Directions

  1. Mix together the ginger, yogurt, honey, vinegar and dill. Season to taste with salt and freshly ground black pepper.
  2. Spoon the dressing over the cucumber and melon, to taste. Mix well to coat. Great for picnics - store in jam jars for easy transportation.
