This cucumber tartare makes for a refreshing and light appetizer or snack. It comes together quickly, only 25 minutes and needs just 7 simple ingredients. The cucumbers are mixed with tomatoes and green onions then seasoned with salt, pepper, and a little bit of line juice for a delicate little salad. Serve the tartare with crackers for an easy appetizer. If you want it to be a little more substantial, spread some goat cheese on the crackers then top with the tartare.

Ingredients

  • 1 cucumber (minced)
  • 1 tomato (diced)
  • 1/2 green onion (minced)
  • salt
  • ground pepper
  • 1 key lime
  • olive oil

Directions

  1. Add the cucumber, tomato, and onion to a bowl.
  2. Season with salt and black pepper and mix well. Drizzle key lime juice onto the mixture.
  3. Marinate for 15 minutes.
  4. Plate using a ring mold and drizzle some olive oil on top. Serve with crackers.

This cucumber tartar was nothing like the ones that I have made in the past. The cucumber really added a unique taste to it and provided a juicy crunch that was much needed. I could make this recipe everyday and give it 4 stars.
