I think this is one that is best the second time round because the water content can really be variable! Furthermore you learn what’s missing etc. I had to add quite a bit of reduced sodium soy sauce to bring out the flavours because the water in the brine of the black beans plus the tomato polpa really diluted the flavours. I think add just tomato purée (eg. intense tomato) and fresh tomato and forego the sauce/polpa. I also added some red kidney beans with the black ones the second time and the flavour was great. I will try it with some mild pasta sauce maybe? That said, it is rather healthy and easy to make- if added to some rice with some guacamole and hot sauce, it’s a very easy feel-good dinner!

My husband and I loved this dish very much (with rice). I doubled the recipe because my hubby loves beans. Next time I will put less water because it was a bit too watery. After it had simmered for a bit I poured it into a crockpot to let it cook some more. Awesome dish❤️

This was delicious! I didn’t use the food processor, I finely diced the veggies and used a combo of apple cider vinegar and red wine vinegar. Next time I will probably add some red chili flakes to add some heat!

This may have been just the way I made it, but I found that the onions were a bit overpowering and I didn’t end up needing the water. I also thought it could salt- which I added a lot of of course. But when I mixed it with the rice it turned out fantastic.

Smelled amazing while cooking and tastes great! If you can't chop the veggies small enough, add at least a minute to the saute time to soften them. The juice flavors rice well but try it on cilantro lime rice for that extra oomf!
