I just tried this easy-peasy recipe and my crustless quiche turned out wonderfully yummy! Although, I didn't have access to muenster cheese, so I just used a combination of aged cheddar and monterey jack because that's what I happened to have on hand. Nice cheesy flavour, and moist to boot. Of course, it's not quite the same without the crust - feels like something is missing in both texture and flavour without it. Makes the quiche seem almost like an omelette at times. But I'm one of those people who has never had any luck getting the crust right, no matter what different tricks I use. So this is a great compromise, and is also very time-saving.
