Ingredients

  • 2 tablespoons cooking oil
  • 1/2 onions (diced)
  • 2 yellow peppers (or green, red, chopped)
  • 1 clove garlic
  • 4 1/2 ounces chopped green chilies
  • 1 1/2 cups milk
  • 4 eggs
  • 1 teaspoon salt
  • 1/4 teaspoon cumin
  • 1/4 teaspoon chili powder (add more if you like it spicy)
  • 2/3 cup flour (For gluten free version use gf flour blend. I use Bob’s Red Mill 1 to 1 Flour Blend)
  • 1 1/2 cups shredded cheddar cheese (jack, or Colby jack cheese)
  • 1 cup chicken (cooked, steak, bacon, or sausage)
