Ingredients

2 tablespoons extra-virgin olive oil
1 red onion (peeled and chopped)
3 zucchini (large, sliced)
2 tablespoons hot water
4 eggs
1 egg whites (whipped)
salt
10 cheese crackers (roughly crumbled)

Directions

1Add the oil to a skillet heated to medium heat. Add the onion and saute for 5 minutes.
2Add the zucchini and fry until brown, about 5 minutes. Add the water and a pinch of salt.
3In a bowl, lightly beat the whole eggs.
4Add the whipped egg white and gently fold into the beaten eggs with a spatula.
5Sprinkle the zucchini with the cheese wafers.
6Pour in the egg mixture and cook on both sides until brown.
