Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 red onion (peeled and chopped)
  • 3 zucchini (large, sliced)
  • 2 tablespoons hot water
  • 4 eggs
  • 1 egg whites (whipped)
  • salt
  • 10 cheese crackers (roughly crumbled)

Directions

  1. Add the oil to a skillet heated to medium heat. Add the onion and saute for 5 minutes.
  2. Add the zucchini and fry until brown, about 5 minutes. Add the water and a pinch of salt.
  3. In a bowl, lightly beat the whole eggs.
  4. Add the whipped egg white and gently fold into the beaten eggs with a spatula.
  5. Sprinkle the zucchini with the cheese wafers.
  6. Pour in the egg mixture and cook on both sides until brown.
