Ingredients

  • 1/2 cup walnuts (finely chopped)
  • 1/4 cup brown sugar (packed)
  • 1/2 teaspoon ground cinnamon
  • 2 1/2 cups self rising flour
  • 1 cup granulated sugar
  • 5 tablespoons butter (melted)
  • 3/4 cup buttermilk
  • 1 egg (lightly beaten)
  • 1 cup frozen mixed berries (or fresh)

Directions

  1. Preheat the oven to 400°F. Line a 6-cup Texas muffin pan with paper liners. Mix walnuts, brown sugar and cinnamon in a small bowl.
  2. Sift flour and granulated sugar into a large bowl. Stir in butter, buttermilk and egg until just combined. Fold in berries. Spoon mixture into prepared pan. Sprinkle with walnut mixture.
  3. Bake for 30-35 mins or until a toothpick inserted into center comes out clean. Cool in pan for 5 mins. Remove from pan; cool completely on a wire rack.
