Description

Trick the kids into eating their veggies with these savory carrot muffins, which are made with flour, ground almonds and grated carrots. While there's not much to the recipe, you do need to let the carrots drain to remove excess moisture before incorporating them into the batter. Once they've baked and have time to cool, dust them with powdered sugar, if desired. They'll keep in an airtight container on the counter for a few days.

Ingredients

  • pasta
  • meat sauce
  • extra-virgin olive oil
  • parmesan cheese

Directions

  1. 1If you have no ready-made pasta in sauce, cook pasta as per normal, al dente, and add meat sauce.
  2. 2In a frying pan or skillet, heat 1 to 2 tablespoons of oil, add the pasta and toast until it forms a crunchy crust.
  3. 3Sprinkle with Parmesan cheese and return to the heat for a few more minutes.
  4. 4Serve immediately directly from the pan.
