Description

For an easily packable snack, try these soft chewy shortbread cookies. To cut the sweetness of a sugar cookie, use chopped nuts in your batch. Caramelizing the pine nuts seals in their earthy taste and firms them up, making the top of this snack crunchy and salty. These flavorful nutty cookies, coated in a sugary glaze, are an excellent treat to take to the office Christmas party.

Ingredients

  • 20 grams sugar
  • 50 grams pinenuts
  • 60 grams egg yolks
  • 102 grams butter (soft)
  • 90 grams sugar
  • 150 grams flour
  • 10 grams baking powder

Directions

  1. 1Preheat oven to 350 degrees Fahrenheit.
  2. 2In a saucepan, heat the sugar until it's a very light caramel.
  3. 3Add the pine nuts and stir. Add the 2 grams of butter, and mix. Pour onto a piece of parchment paper, or a Silpat to cool.
  4. 4In a bowl, whisk the egg yolks, 100 grams of butter, and sugar.
  5. 5Add the sifted flour and baking powder, mix until the dough comes together.
  6. 6Form a dough ball, cover with plastic wrap, and refrigerate for 30 minutes
  7. 7Roll out the dough, and cut out the biscuits with a cookie cutter.
  8. 8Sprinkle with the caramelized pine nuts.
  9. 9Bake for 20 minutes.
