  • 8 tablespoons butter (chopped)
  • 1 tablespoon honey
  • 1 3/4 cups bran flakes
  • 1 cup quick-cooking oats
  • 1 cup whole wheat self rising flour
  • 1/2 cup dried sweetened cranberries
  • 1/3 cup sunflower seeds
  • 1/4 cup dried apricots (finely chopped)
  • 1/4 cup light brown sugar (packed)
  • 1/4 cup vegetable oil
  • 1 egg (lightly beaten)

Directions

  1. Preheat the oven to 350°F. Line a large baking sheet with parchment paper. Place the butter and honey in a small saucepan on low heat. Cook and stir for 2-3 mins, or until butter is melted. Remove from heat.
  2. Place the remaining ingredients in a large bowl. Stir in the honey mixture until well blended. Shape 2 heaping tablespoons of the mixture into balls and place, well spaced, on the prepared pan. Flatten slightly.
  3. Bake for 12-15 mins, or until golden brown. Cool cookies on the pan on a wire rack (the cookies will firm up as they cool).
