Ingredients

  • 700 grams chicken breasts
  • 100 grams grated parmesan cheese
  • 150 grams bread crumbs
  • 3 egg whites
  • olive oil
  • 200 grams spinach (shoots)
  • 1 zucchini
  • dried tomatoes
  • hazelnuts
  • hazelnut oil
  • balsamic vinegar
  • salt
  • ground black pepper

Directions

  1. Cut the chicken into medium sized pieces.
  2. Put the Parmesan and the breadcrumbs in a bowl, and in another bowl, the egg whites.
  3. Dip the chicken in egg whites, and then roll in the breadcrumbs.
  4. Heat 2 tablespoons of olive oil in a skillet, and cook the chicken.
  5. Wash the spinach leaves.
  6. Cut the zucchini into thin strips.
  7. Put some salad, zucchini, sun-dried tomatoes, hazelnuts, and pieces of crunchy chicken on each plate. Sprinkle with dressing made from 1 tablespoon of balsamic vinegar, 2 tablespoons of hazelnut oil, salt, and pepper.
