- 2 cups organic vegetable broth (fat-free, lower-sodium)
- 1 cup pearl barley (uncooked)
- 1 cup frozen whole kernel corn
- 1/4 cup green onions (chopped, about 3, white and green parts)
- 1 tablespoon fresh lime juice (the juice of half of a lime, slice the other half and serve with the burritos)
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon ground red pepper
- 19 ounces black beans (lower-sodium, rinsed and drained)
- 2 cups diced tomatoes (canned, undrained, 540ml can)
- 4 ounces diced green chiles (undrained)
- 1 garlic clove (minced, I add this in the last 15 minutes)
- 1/4 cup chopped fresh cilantro
- salt (to taste)
- 10 flour tortillas (8-inch)
